stuff is weird
I've worked with it a bit now and I understand what it does. I can't just add it to existing recipes because it throws everything off. Takes a lot of experimentation and wasted flour. It's OK for strictly followed banh mi recipes but I'd rather just skip it altogether. I think it's really geared toward breads that are fermented in warm climates. Not for me.
